Pot-au-feu végétarien

A delicious and comforting recipe for winter evenings ❄️


For 4 persons

Ingredients

✔️ ½ pumpkin

✔️ 1 carrot

✔️ 1 turnip

✔️ 1 rooted parsley

✔️ 1 onion

✔️ 10 snap beans

✔️ 2 potatoes

✔️ 1 clove of garlic

✔️ Vegetable stock powder

✔️ Dried oregano

✔️ Dried thyme

✔️ 200 g chickpeas

✔️ Himalayan Salt

✔️ Fresh flat-leaf parsley

✔️ Olive oil

 

Steps

1️⃣ Soak the chickpeas for 12 hours, then rinse them well. 

2️⃣ Peel the potatoes, onion and garlic clove and chop them.

3️⃣ Rinse and chop all other vegetables.

4️⃣ Put all the ingredients together in a saucepan (without the parsley) and cover with water.

5️⃣ Bring to a boil, then lower the heat to low and simmer for 1 hour.

6️⃣ Add a drizzle of oil and the chopped parsley just before serving.

7️⃣ Enjoy hot!
