Zucchini tagliatelle with pesto

✔ 2 large zucchini

✔ 1 bunch fresh basil leaves

✔ 50g of pine nuts

✔ 3 cloves of garlic

✔ 125ml of olive oil

✔ 70g parmesan cheese

✔ Pepper and salt

✔ 16 cherry tomatoes

✔ 4 slices of smoked ham


  1. Prepare the zucchini tagliatelle: using a vegetable peeler or a vegetable spaghetti machine.
  2. Prepare the pesto: in a blender, mix the basil leaves, cloves of garlic, olive oil, 30g pine nuts, 50g parmesan cheese. Season with salt and pepper.
  3. In a dish, mix the tagliatelle and the pesto. Arrange on the plates and garnish with cherry tomatoes (cut in half), parmesan shavings, smoked ham (in slices) and pine nuts (grilled in a pan).

✔ A vegetarian version of the dish, without smoked ham, is just as delicious!

✔ You can also make spaghetti or tagliatelle of carrot, beetroot, sweet potato, turnip, and so on. Dare to be creative!
