For 4 persons


✔ 1/2 pumpkin

✔ 3 carrots

✔ 1 zucchini

✔ 2 onions

✔ Salt and pepper

✔ 50g pumpkin seeds

✔ 50g of Emmental

✔ 75g of spelt flour

✔ 2 tablespoons olive oil


  1. Preheat the oven to 210°C.
  2. Cut the vegetables into pieces.
  3. Cook the vegetables in a small pan for 15-20 minutes (with salt and pepper).
  4. Prepare the crumble: mix the pumpkin seeds along with the Emmental in a blender. Pour the mixture into a salad bowl, adding the flour, the olive oil and 2 tablespoon of water. Mix up with your fingers.
  5. Place the vegetables on a baking dish and sprinkle the crumble mixture on top.
  6. Bake for 30 minutes.
