Roasted romanesco broccoli and yoghurt dressing

Roasted romanesco broccoli:

✔ 1 small romanesco broccoli

✔ 4 tbsp olive oil

✔ 2 tbsp of honey

✔ 1 tsp of turmeric powder

✔ 1 tablespoon of paprika powder

✔ 1 tsp of curry powder

✔ Salt and pepper

✔ 1 dried apricot

✔ 1 handful of flaked almonds


Yogurt dressing:

✔ 250g plain yoghurt

✔ 50ml of olive oil

✔ 1 handful of chopped chervil

✔ 1 handful of chopped parsley

✔ 1/2 chopped garlic clove

✔ 1 teaspoon of honey

✔ 2 tbsp lemon juice

✔ 1 teaspoon ground cumin

✔ Salt and pepper


  1. Preheat the oven to 180°C. Cut the romanesco and put it in a baking dish. Add olive oil, honey, turmeric, curry, paprika, salt and pepper. Bake for 25-30 minutes, stirring occasionally.
  2. Mix all the ingredients of the yoghurt dressing together.
  3. Remove the romanesco from the oven, add the chopped dried apricots, the flaked almonds and mix everything up.
  4. Serve in pretty bowls.

? Tip ?: Dip the roasted romanesco broccoli in the yoghurt dressing as an appetizer or for a snack. Or pair with a piece of good bread or another source of starch for a balanced meal.
