Rhubarb and almond pie

✔️ 1 shortcrust pastry

✔️ 5 stalks of rhubarb

✔️ 2 eggs

✔️ 130 g cane sugar

✔️ 130 g almond powder



1. Preheat the oven to 180°C

2. Mix the eggs with the sugar and the almond powder

3. Peel the rhubarb stalks and cut them into small pieces

4. Spread the dough on a baking paper on the oven rack

5. Arrange the rhubarb pieces on the dough (leaving a wide edge all around) and then add the egg-sugar-almond mixture on top

6. Fold the edges of the dough towards the center

7. Bake for 30 minutes
