Quinoa salad with Moroccan flavours

For 2 persons

Ingredients

✔️ 160 g of lentils (raw)

✔️ 120 g of quinoa (raw)

✔️ 2 carrots (medium size)

✔️ 1 zucchini

✔️ 8 olives

✔️ 3 to 4 dates

✔️ 2 tablespoons of olive oil

✔️ 2 tbsp rapeseed oil

✔️ 4 tablespoons of balsamic vinegar

✔️ The juice of 1 lemon

✔️ Coriander and/or parsley

✔️ Turmeric, curry, paprika and cinnamon

 

Steps

1. Cook the lentils and quinoa (after soaking them for 12 hours). 

2. Cut the carrots and courgette and steam them.

3. Leave the ingredients to cool

4. Cut the dates and olives into small pieces

5. Mix everything together and add the olive oil, rapeseed oil, balsamic vinegar, lemon juice, coriander, parsley and spices.
