Oven roasted vegetables

For 4 persons


✔ 1/2 pumpkin
✔ 6 cherry tomatoes
✔ 6 mushrooms
✔ 1 zucchini
✔ 1 sweet potato
✔ 3 shallots
✔ 1 green pepper
✔ 1 red pepper
✔ 3 yellow carrots
✔ Olive oil
✔ Salt and pepper
✔ Herbs de Provence


  1.  Preheat the oven to 180°C.
  2.  Peel the shallots as well as the carrots and the sweet potato (or keep the peels on which are filled with good nutrients).
  3. Rinse and cut all vegetables. Put them in a baking dish.
  4.  Drizzle with olive oil. Add salt, pepper and herbs de Provence and mix everything up.
  5. Bake for about 40 minutes or until vegetables are tender.
