✔ 25g grated coconut
✔ 150g red lentil-coconut mix
✔ Half a zucchini
✔ 2 large carrots
- Make the coconut milk: mix the grated coconut with 125ml of water in a blender.
- In a saucepan, put together 150g red lentils mix, 750 ml water, the half zucchini and the two carrots cut into pieces.
- Bring to a boil and simmer on low heat until the water is totally absorbed.
- Add the homemade coconut milk and enjoy.
