Courgette tagliatelle and pesto

Courgette tagliatelle and pesto

Quick and healthy recipe with 100% The Barn products suggested by WESH food

Ingredients

4 people
  • 2 large courgettes
  • 1 large bunch of basil
  • 50g of pine nuts
  • 3 cloves of garlic
  • 125 ml olive oil
  • 70g of parmesan cheese
  • Pepper and salt
  • 16 cherry tomatoes
  • 4 slices of smoked ham

Preparation

  1. Prepare the courgette tagliatelle: using a vegetable peeler, mandolin or spaghetti machine.
  2. Prepare the pesto: in a blender, blend the basil leaves, garlic cloves, olive oil, 30g of pine nuts, 50g of parmesan. Add salt and pepper to taste.
  3. Mix the tagliatelle and pesto in a dish. Arrange on plates and garnish with cherry tomatoes (halved), parmesan shavings, smoked ham (cut into strips) and pine nuts (pan-roasted).

 

Tips A vegetarian version of the dish, without smoked ham, is just as delicious!

You can also make spaghetti or tagliatelle of carrot, beetroot, sweet potato, turnip, etc. Dare to be creative!
