Carrot coconut coriander soup

Quick and healthy recipe with 100% The Barn products suggested by WESH food

Ingredients

2 people

✔ 25g grated coconut

✔ 1 onion

✔ 6 carrots

✔ 1/2 bunch of coriander

✔ Salt and pepper

Preparation

  1. Prepare the coconut milk: mix the grated coconut with 125 ml of water in a blender.
  2.  Chop the onion and fry it in a little oil in a pan.
  3. Add the carrot slices, a little salt and cover with water. Bring to the boil and then simmer until the carrots are tender.
  4. Blend in a blender with the coriander and a little coconut milk. Add salt and pepper to taste.
