Preparation

Prepare the coconut milk: mix the grated coconut with 125 ml of water in a blender.
Chop the onion and fry it in a little oil in a pan.
Add the carrot slices, a little salt and cover with water. Bring to the boil and then simmer until the carrots are tender.
Blend in a blender with the coriander and a little coconut milk. Add salt and pepper to taste.
