Spring orzo salad

orzo salad recipe

Quick and healthy recipe with 100% The Barn products suggested by WESH food

Ingredients

4 people

✔️ 300 gr orzo
✔️ 500 g green asparagus
✔️ A handful of pistachios (about 30 gr without the shells)
✔️ 400 g of green peas
✔️ 50 g parmesan cheese
✔️ 1 clove of garlic
✔️ 1/2 bunch of mint
✔️ juice of one lemon

For topping
✔️ 1 burrata

Preparation

  1. Remove the stems from the asparagus and cut the rest into small pieces
  2. Shell the peas
  3. Cook the asparagus and peas in a frying pan
  4. Cook the orzo (8 to 10 minutes in boiling salted water)
  5. Prepare the pesto by mixing the pistachios, parmesan, mint, garlic, olive oil and lemon juice
  6. Mix the cooked asparagus, pesto and orzo in a large dish
  7. Serve while still warm (or lukewarm) with the open burrata as a topping.
  8. Enjoy your meal!
