Melon salad

Quick and healthy recipe with 100% The Barn products suggested by WESH food

Ingredients

4 people

✔ 1 cantaloupe 

✔ 240gr whole fusilli (uncooked)

✔ 100gr feta cheese 

✔ 200gr baby spinach 

✔ 20 small cherry tomatoes

✔ 20ml olive oil with a dash of lemon juice and balsamic vinegar.

✔ Salt, pepper & mint

Preparation

  1. Cook the whole fusilli in boiling water.
  2. Open the melon, remove the seeds and make balls with a melon baller.
  3. Arrange the baby spinach in a salad dish.
  4. Cut the feta cheese into small cubes.
  5. Wash and cut the cherry tomatoes and place them on the young shoots.
  6. Add the cooked pasta, melon balls and feta cheese.
  7. Season with olive oil, lemon juice, salt, pepper and mint.
