Stuffed butternut

stuffed butternut

Quick and healthy recipe with 100% The Barn products suggested by WESH food

Ingredients

2 people
  • 2 Butternut
  • 120g quinoa
  • 70 g feta cheese
  • 3 tbsp. olive oil
  • Fresh thyme
  • Salt & pepper

Preparation

  1. Preheat the oven to 200°C
  2. Cut the head off the first squash and scoop out the centre
  3. Cut the second squash, remove the seeds and cut the flesh into small pieces
  4. Put the pieces in the oven with 2 tablespoons of olive oil and thyme for 30 minutes
  5. Cook the quinoa (1 part quinoa to 2 parts water)
  6. Cut the feta cheese into small pieces
  7. Mix the cooked meat, quinoa, feta cheese and thyme
  8. Enjoy!

 

Advice ? The mixture can be used to stuff the first squash or in soup.
