VEGETARIAN STEW

recipe for vegetarian pot au feu

Quick and healthy recipe with 100% The Barn products suggested by WESH food

Ingredients

4 people

✔ ½ pumpkin

✔ 1 carrot

✔ 1 turnip

✔ 1 tuberous parsley

✔ 1 onion

✔ 10 snap beans

✔ 2 potatoes

✔ 1 clove of garlic

✔ Vegetable stock

✔ Dried oregano

✔ Dried thyme

✔ 200 g chickpeas

✔ Himalayan salt

✔ Fresh flat leaf parsley

✔ Olive oil

Preparation

  1. Soak the chickpeas for 12 hours, then rinse them well.
  2. Peel the potatoes, onion and garlic clove and chop them.
  3. Rinse and chop all other vegetables.
  4. Put all the ingredients together in a pan (without the parsley).
  5. Bring to the boil, then reduce the heat to low and simmer for 1 hour.
  6. Add a drizzle of oil and the chopped parsley just before serving.
  7. Enjoy it hot!
