Roasted Romanesco cabbage with yoghurt sauce

Ingredients

 

Roasted Romanesco cabbage :

✔ 1 small romanesco cabbage

✔ 4 tablespoons olive oil

✔ 2 tablespoons honey

✔ 1 tsp turmeric powder

✔ 1 tsp paprika powder

✔ 1 tsp curry powder

✔ Salt and pepper

✔ 1 dried apricot

✔ 1 handful of slivered almonds

Yoghurt sauce :

✔ 250 g plain yoghurt

✔ 50 ml olive oil

✔ 1 handful chopped chervil

✔ 1 handful of chopped flat-leaf parsley

✔ 1/2 clove garlic, minced

✔ 1 tsp honey

✔ 2 tsp lemon juice

✔ 1 tsp ground cumin

✔ Salt and pepper

Preparation

  1. Preheat the oven to 180°. Slice the cabbage and put it in an ovenproof dish. Add olive oil, honey, turmeric, curry powder, paprika, salt and pepper. Bake for 25-30 minutes, stirring occasionally.
  2. Mix together all the ingredients for the yoghurt sauce.
  3. Take the cabbage out of the oven, add the chopped dried apricot, the flaked almonds and mix.
  4. Place in pretty bowls.

Tips: Enjoy the roasted Romanesco cabbage dipped in yoghurt sauce as an appetizer or snack. Or serve with a piece of good bread or other starchy food for a balanced meal.
