Green asparagus Flemish style

recipe Green asparagus Flemish style

Quick and healthy recipe for a savoury cake, with 100% The Barn products suggested by WESH food

Ingredients

2 people

✔ 500 g green asparagus

✔ 120 g quinoa

✔ 2 Eggs

✔ Rapeseed oil

✔ A few sprigs of chervil

✔ Salt and pepper

Preparation

  1. Rinse the asparagus and cut 2 cm off the bottom. Steam or cook in a pot for 20 minutes.
  2. Cook the quinoa (ideally soak it for 12 hours before cooking).
  3. Cook the eggs in boiling water for 10 minutes and then chop them.
  4. Mix the eggs, chopped chervil and rapeseed oil. Season with salt and pepper.
  5. Arrange the asparagus on a plate, pour the egg-chervil-rapeseed mixture over it and serve hot with the quinoa.
