History
Michel Corthouts started Maya seitan in 1992. Today, Maya is a small seitan and tofu production company with 5 full-time employees. They offer an honest, healthy and particularly tasty alternative to meat.
All the ingredients carry the organic label. This means that they are grown without the use of artificial fertilizers and herbicides. The result is strong, rich-tasting vegetables and grains. Maya products do not contain any ingredients of animal origin. They are therefore 100% vegan.
In addition, no cheap fillers or flavourings are added to the preparations. The ingredients are processed simply. As few machines as possible are used. In this way, the natural taste of the carefully selected ingredients is fully appreciated.
At the end of 2005, Maya moved to a brand new production facility, equipped according to the highest food safety standards. All aspects of the production process are constantly monitored. This ensures a reliable and high quality product.
From wheat flour to seitan
The basic ingredient of Mayan seitan is pure wheat flour, which results in a very soft and juicy seitan.
They first make a dough from flour and water. This dough is washed with running water to separate the starch and bran from the gluten (the starch is used as raw material for other products). Maya Seitan thus obtains a very elastic wheat gluten dough with a very high nutritional value. When they cook this paste in an aromatic broth of shoyu and spices, the result is delicious Maya Seitan.
All meat dishes can also be prepared with seitan.
