Buffl’Ardenne is the only Belgian cheese maker to produce 100% organic buffalo milk mozzarella.
A Bold Story
Born out of a somewhat crazy bet, Buffl’Ardenne is a family-run farm located in Semel (Neufchâteau), in the province of Luxembourg. In 1986, Patrick Cornelissen took over the family farm and in 2010, he made a major strategic shift: he abandoned dairy cattle farming to focus on buffalo, a hardy breed perfectly suited to the Belgian climate and organic farming.
Today, 170 female buffalo graze on 60 hectares, managed by his son Sébastien. Together, they produce 6,000 balls of organic mozzarella a week, a rare and sought-after product.
Unique Expertise
Having trained in France in 2011, Patrick adapted the traditional recipe to create an exceptional mozzarella. Demand far outstrips supply, and this cheese is sold in delicatessens and is highly regarded by pizza chefs and Michelin-starred chefs throughout Belgium.
100% Ardennes Mozzarella
Mozzarella, whose name derives from the Italian verb ‘mozzare’ (to cut), is a traditional Italian cheese first mentioned as early as 1570. Its production dates back to the 12th century, when monks at San Lorenzo in Capua were already distributing a cheese known as ‘mozza’. It became popular in the 18th century thanks to the breeding of female buffalo.
Mozzarella is a mild cheese, low in fat and salt, making it beneficial for cardiovascular health. It is rich in calcium, phosphorus, protein and vitamin B12, which makes it good for bones, muscles and the immune system.
