Carrot, coriander & coconut soup

For two people :

✔ 25g grated coconut

✔ 1 onion

✔ 6 carrots

✔ 1/2 bunch of coriander

✔ Salt and pepper

  1. Make the coconut milk: mix the grated coconut with 125ml of water in a blender.
  2. In a saucepan, sauté the cutted onion in oil
  3. Add the carrot slices, a pinch of salt and cover it with water. Bring to a boil and cook on low heat until the carrots are tender.
  4. Mix everything in a blender with the coconut milk and coriander. Season with salt and pepper to taste.
