Apple and rhubarb crumble

For 2 persons:

✔ 3 apples

✔ 2 « branches » of rhubarb

✔ Half a lemon juice

✔ 1 tbsp of white almond puree

✔ 2 tbsp of honey

✔ 8 lemon « sablés » biscuits

  1. Peel the apples and stems of rhubarb and cut them into small pieces.
  2. Cook the fruits in a saucepan with the lemon juice, almond puree and honey over low heat until the fruits are almost ‘melted’.
  3. Pour the mixture into two bowls and let it cool down in the refrigerator for 2 hours.
  4. Add the « sablés » crushed on top when serving.
